In an old fashioned glass, muddle the peach slices with the bitters and simple syrup. Fill the glass with ice, add bourbon, and stir to mix.
This is an interesting variant of the classic Old Fashioned cocktail, but with a peach base. We’re basically just using peach slices instead orange and cherry (if you’re the type to use fruit in your Old Fashioneds) and substituting peach bitters for Angostura. This might also be good with Angostura bitters as well as the peach, as the Fee Brothers peach bitters I use aren’t as bitter as what the recipe originally calls for. It might also be good with a nice Scotch in place of the bourbon.
